We ADORE this little gem. Quick and Yummy breakfast. You can even it it on the go. The brown you see in the pic is cinnamon swirls. Mmmmmm.
In a coffee cup, mix
1 beaten egg
2T flax meal
1/4t cinnamon
1T raisins
1/4t baking powder
1t oil
Microwave 1 min. Remove from cup, cool a bit and eat!
1 muffin is approx: 180 cal, 4g fiber, 9 gr protien
What kind of oil did you use?
ReplyDeleteBelieve it or not, OLIVE OIL. I didn't feel like taking the time to melt the coconut oil. It was great! It didn't taste "olivey" at all. It was smooth and moist and a little sweet.
ReplyDeleteThis is very similar to the "muffin in a mug " recipe I use which takes 1/4 cup of ground flax, 1/2 teaspoon baking powder and 1 teaspoon butter. Otherwise the same. I don 't use raisins but that sounds good. I use cinnamon and sometimes ginger. Any number of flavorings and spices make good muffins. They're great with butter or cream cheese.

That's a great idea. You could premix the dry ingredients at home. Add the egg and stir. Actually, if you wanted to make it all dry, you could use Egg-R-Placer powder instead of the egg. Then add your extra 2T water at work.

ReplyDeleteOK, coconut flour doesn't work too well as a direct substitute (I knew I should have looked up swap ratios first). It came out very dry, even after I tossed in a bit of water to thin out the batter.
ReplyDeleteBut with a decent dollop of butter and a splash of 100% maple syrup, this ain't too bad. I bet it could much better, though. This had a dry pancake texture instead of anything resembling a bread-like texture.
Nope, coconut flour gulps up all liquid. If you subb'd coconut flour without adding additional liquid, it would come out dry and I would guess even get a little hard to swallow! lol. Flax meal makes it soft and moist. Try an extra 2T of liquid if you do the coconut. Maybe 1T water, 1T oil. Won't be the same recipe, but good I bet! :)

ReplyDeleteHonestly, I have NO idea. I'm sorry. Paleo means I don't eat wheat or any grains, so I've not tried it. I don't know what the ratio's would be for wheat flour.
