For the cupcake part, in a bowl, mix
1 mashed banana
2T unsweetened cocoa powder
For the filling, in a separate bowl mix:
1T almond butter
2t cocoa powder
(If you want this sweeter, you could add 1t honey or a few drops of stevia. We thought the sweetness from the cupcake made it sweet enough, and delicious- but back in my pre-paleo days, I would have wanted a bit more sweetness in the filling. It's up to you.)
Grease 2 small cupcake cups. We use corning wear ones pictured below. Pour a think layer of the cupcake batter in each one as shown:
Make 2 balls out of your filling and place one of the balls in the middle of each cupcake.
Pour remaining batter evenly between both cups on top of balls, so everything is covered
Microwave for 2 minutes. Enjoy!
