90 second cinnamon-raisin muffins

Remember the 90 second bread in the last post? Well, that same recipe with a wee adjustment in the oil and flour and addition of cinnamon and raisin makes a very authentic and delicious muffin! We adore it. It is cakey and yummy!

Mix 1 egg, 1T olive oil, 2 1/2t coconut flour, 1/4t baking powder, raisins and cinnamon in a greased cup and microwave for 90 seconds.

*Your batter should be the consistency of thick pancake batter.
