Tangy, Restorative Chicken Soup- Hot and Sour Style

This is my husbands recipe for A twist on chicken soup. It's my favorite chicken soup recipe in the 21+ years we've been married! This makes about 5-6 quarts. Freezes beautifully

Tangy Restorative Chicken Soup (Hot & Sour Style)
-----------------------------------------------
1 bulb Garlic
1 large Onion
8oz Peas
8oz Carrots, julienne
3-4 lbs of Chicken (bone-in)
1/4 C Celery,
1 tsp oregano,
1 tsp basil,
1/4 C Tamari
Hot Sauce (to taste)
Cayenne (to taste)
Salt and Pepper (to taste)
3/4 C outer leaves de-leafed and quartered brussel sprouts,
2 inches grated ginger,
1/2 C vinegar,
1/2 C spicy relish
1 can bamboo shoots,
1 box mushrooms
2 Qt water

Cook chicken thighs in 2 qts of water, to make broth. De-bone, chop and put chicken back in pot. Add remaining ingredients. Simmer for 2 hours. Enjoy!

(**I love mine extra hot and have really enjoyed it with an extra squirt of hot sauce in each bowl and a squirt of lime. I also am a broccoli FREAK and sometimes added broccoli to my bowl. Excellent!)
