- 2 cake options: a cupcake or a creme filled cake,
- 2 baking options - microwave or oven and
- 3 frosting options: traditional, or non dairy healthier, and perfectly paleo.

Ingredients for cake:
1 egg - beaten
1 T Olive Oil
2 1/2t coconut flour
1/8 c shredded carrot
2T raisins
1T walnuts
1/4 t vanilla
1/4t cinnamon
1/8t nutmeg or pumpkin pie spice optional. (I didn't do this)
Microwave directions:
Grease coffee cup. Mix ingredients in cup. Should be consistency of thick pancake batter. Microwave 90 seconds. Remove from cup. Wait 5 minutes and spread desired frosting on top.
Baking Directions:
Grease cupcake tin or crucible. Bake at 350 about 15 minutes or until top bounces back. Remove from tin. Wait 5 minutes and spread desired frosting on top.
*Creme Filling Variation: When your cupcake has cooled, use an apple corer like this one to make a hole in the center. Proceed to STUFF with desired frosting.

Below is the apple corer I use. I LOVE it! IT is cheap, and sharp and does the job. Even my hubby who has never liked corers, really likes this one.

Frosting Options:
Perfectly Paleo Frosting (Option #1, shown here)
1/4 c coconut
1/8c honey
1/8 t vanilla
Mix well and spread on cooled cake. (Or stuff in center)
Traditional Frosting (Option #2) Makes 3/4 cup. Save some for next time! :)
4 oz Cream Cheese
1/8c Butter
1/2c Confectioners sugar
1/4t Vanilla extract
Mix well and spread on cooled cake. (Or stuff in center)
Non dairy, Faux Cream Cheese Frosting (Option #3) Makes 3/4 cup. Save some for next time! :)
This is the same as above but healthier : substituted with Tofutti cream cheese and coconut oil
4 oz Tofutti Cream Cheese
1/8c Coconut oil
1/2c Agave Powder
1/4t Vanilla extract
Mix well and spread on cooled cake. (Or stuff in center)
