Instant Banana Bread

This recipe was born in an ideal way. Someone saw the 90 sec. muffin recipe post and tweaked it into many wonderful goodies. She sent me a pic and general ingredients of a banana bread in a bowl recipe she made based off the muffin recipe above. I tweaked the ingredients she used and this beautiful baby was born! It is great hot, but unlike many grain free foods, it is even BETTER if you wait 5-10 min for it to cool. The flavors blend and give it much more depth.

Here you go Paleo peeps! Instant banana bread!


Ingredients:
2 eggs - beaten
1/2T oil
1T coconut flour
1/4 t lemon juice
1/4t baking soda
1/2-3/4t vanilla
1 banana - mashed
1/2t pecan or walnut pieces
Good sprinkle of cinnamon
Dash of salt

Directions:
-Grease bowl.
-Mix all ingredients WELL. This is key to this lovely dessert. You want it to taste like moist banana bread, NOT eggs. Mix well.
-Microwave 3-4 minutes or until done. (This will vary from microwave to microwave, it took just under 4 min in mine)
Let cool for 5-10 minutes. Trust me. Worth the wait.
